Red wine services

• Fruit receiving and Processing on a full Processing line with Optical sorter.

• Crush, Ferment, Press, and Barrel Down.

• 14-16 Days on Skins. including up to 3 PO’s a day. EM negotiable.

• Monthly samples for analysis pulled and submitted (lab fees not included).

• Additions to tanks (not including the supplies). Tartaric acid, DAP and so2 will be included.

• Heating and cooling to every tank.

• Up to 22 months aging, including monthly sampling, so2 addition and one topping per month.

• 1x/Week Barrel Stirring for sluggish lots.

• 3 rackings per lot during the 22 months of aging.

• Pump-overs during extended maceration if available.

• Complimentary empty barrel storage through Dec 31st (includes wash every 3 months, ozone 1x/month and 2x/year steam).

• Not including any in house analysis (We will only run brix and temp during harvest).

• Press cuts – Either leave or combine with free run by Feb 1st.

• Innovint cloud-based software for real time winemaking, inventory and work order management.

• Tanks are monitored using Vinwizard software.

White wine

White wine services

• Heating and cooling to every tank.

• Up to 10 months aging, including monthly sampling, so2 addition and one topping per month.

• Stirred every 2 weeks

• Heat and Cold Stabilization prior to bottling (3 weeks max)

• 1 racking per lot during the 10 months of aging.

• Complimentary empty barrel storage through Dec 31st (wash every 3 months, ozone 1x/month and 2x/year steam)

• Not including any in house analysis (We will only run brix and temp during harvest).

* Stainless ferment for White is not guaranteed and depends upon tank availability during harvest as determined in Winery’s sole discretion.

BARREL and CELLAR SERVICES

As a full-service, state of the art custom crush winery, we also offer topping, additions and other analysis monitoring while your is wine in our storage facility. To ensure your wine ages as it should, our climate control systems maintain warehouse temperatures of 55° to 58° and 65% to 70% humidity. Backup generators ensure no fluctuations in temperature. Motion-activated lighting minimizes UV exposure.
